Our uniforms are made by Pure Waste, a Finnish clothing brand that uses 100% recycled fibres. When they start to wear out, we prefer repairing them rather than replacing them. The mending is done by Carlos’s mum, who is also responsible for the embroidery on the linen for our bread baskets—a small detail that brings us joy every day. Sometimes, Carlos himself does the mending (a skill he’s proud of!). In the Restaurant most of our furniture is sourced secondhand.
